This is my first recipe in my book, Coco Palm Resort St. Lucie. I’m not sure what inspired the idea for the recipe, but it’s a fun and easy recipe that I used to make for my family when I was growing up. It’s actually pretty similar to the recipes we make for our holiday dinners, but my kids and I enjoy making it for ourselves while working in the kitchen.
The recipe says it’s for coconut milk and coconut cream cheese, but I found that the coconut milk version was far more flavorful and yummy so I used the coconut cream cheese instead.

That looks so delicious!” You add the coconut milk, you add the coconut cream cheese, and you top it with the rest of the ingredients. It’s like an “almost” recipe, but a recipe that you make for yourself with all the care and the knowledge that you use it for a lot.
