When I opened the mail one day back in February, I was greeted by a box of riu bambu, a Korean rice cake with a soft center and a crunchy outside. I instantly knew I had to have it.

I’ve been in the market for my new favorite food for a while now, and riu bambu is up there as my top contender. It’s been a long time since I’ve had a riu bambu, which adds to its allure.
