I’ve been on a bit of a cooking kick lately. I’m currently making a bunch of different dishes that have the flavor of fresh tomatoes, zucchini, and garlic.
Cooking is fun and easy, but when there is some kind of complicated recipe, I always tend to find a way to make it easier. That’s why I love riu naiboa, a salad with tomatoes, cucumbers, and scallions. There is no recipe for this one, but instead it’s just a matter of adding the three ingredients to a bowl, throwing on some olive oil, salt, pepper, and some of the best dressing you can find.
I think this is the kind of thing that I can make a salad for and get most people eating it. The problem is that I am usually eating it and my kids are looking at it. The kids are always asking, “So, what is this?” to which I reply, “This is basically a salad, but with tomatoes, cucumbers, and some scallions, all on top of a big pile of rice.
The problem with this recipe is that the rice is really the only part of the salad that needs to be cooked to a point where it cooks away before it can be digested. If you are going to boil the rice, cook it in the rice.
The only way to cook rice is to boil it. That is, unless you want to use a rice cooker. The trouble is that in all the rice cookery I’ve tried (and I don’t mean the cookware, I mean the rice), I’ve never found one that lets you turn rice into a salad. So it’s like trying to make a salad out of a salad.

The fact that I’ve found rice in my life is a bit of a surprise, but I think it is kind of a good one. You boil it until it is soft and pliable (not mushy or undercooked), then you add whatever you want to it (meat, cheese, etc.), and you let it sit for a bit so that everything gets cooked to the right temperature. Then you serve it, or you cook it yourself.
I think this is the most amazing thing that Ive tried so far. It is so easy to do, and you can do it a million different ways. The only thing that I have to say is don’t be afraid to use rice as a salad, because rice is one of the most powerful of foods.
